Probably getting a H77M Pro. Don't see (any advice is much appreciated!) the need to spend about $40 more for 2 more power phases for a power-frugal CPU, and the 2 additional USB 3.0 ports the Z77M-PRO has over the H77M-PRO isn't going to be used... I can only see 2 peripherals that I'll want USB 3.0 speed for, an external HDD (eSATA version is also possible) and a USB 3.0 card reader.

H77 based is alright or even a cheaper B75 (more limitations than H77). Take note that this processor comes without the HD graphics/integrated so you will need a dedicated graphic card. ASRock H77 Pro4-M can be recommended.
